Origin Story & Identity

Greener Pastures Chicken grew out of a conviction that the way we raise animals for food matters — to the land, to the animals, and to the people eating them. I came up through the sustainable food world, and after years working with pastured eggs and organic feed, I saw a real gap in the Texas market: no one was doing pasture-raised poultry with the level of rigor and transparency it deserved. So we built it from the ground up — our own farms, our own USDA-inspected processing facility in Elgin, and our own standards. It's been a vertically integrated operation from day one, because that's the only way to truly stand behind what's in the package.

We hold Regenerative Organic Certified™ (ROC), USDA Organic, Non-GMO Project Verified, Certified Humane®, and HFSAA Halal. We also operate our own USDA-inspected processing facility that is BRCGS certified.

Fun Fact:

We're one of the only poultry operations in the country to hold Regenerative Organic Certified™ status — a certification so rigorous most farms never attempt it.

What do you raise and produce?

We raise pasture-raised chickens on certified organic pasture in Central Texas. Our birds live outside on fresh grass, rotated daily to new ground — not "access to the outdoors," but actually out there. We process at our own USDA-inspected facility and sell whole birds and a full range of cuts through retailers and foodservice customers.

What are you most proud of producing?

Honestly, the whole bird. There's something profound about raising an animal with genuine care — real pasture, real organic feed, real sunlight and space — and having it become a beautiful, clean product that feeds families.

Philosophy & Practices

We believe farming should leave the land better than we found it. That means working with natural systems rather than against them — moving birds regularly so the land can rest and recover, building soil organic matter over time, and avoiding the shortcuts (antibiotics, synthetic inputs, confinement) that compromise both animal welfare and ecosystem health. We call it regenerative because that's exactly what it is: we're trying to regenerate something.

How does this reflect in your practices?

Our birds are rotated across certified organic pasture on a planned schedule, which mimics natural grazing patterns and prevents overgrazing. We feed certified organic, Non-GMO Project Verified feed — no antibiotics, ever. Our Regenerative Organic Certified™ status requires us to meet some of the highest standards in the world for soil health, animal welfare, and farmer fairness, and we're audited on all of it.

What’s something about your practices that most people don’t know — but should?

Most people don't realize that "free range" and "pasture-raised" are almost completely different things. Free range can legally mean a small concrete pad with a tiny door the birds never use. Our chickens are actually outside, on actual grass, every day. The difference in animal welfare — and in the nutritional profile of the meat — is real and meaningful.

What’s the biggest challenge of growing food the way you do?

Cost and scale. Doing this right is expensive. Pasture requires land, rotation takes management, and USDA-inspected processing for small-to-mid-scale operations is not easy or cheap. We're not competing on price with industrial chicken — we're competing on integrity, and we have to earn that customer every single time.

Daily Life & Personal Connection to the Work

What’s your favorite part of the work you do every day?

Walking the pasture in the morning and seeing the flock spread out on green grass the way chickens are actually supposed to live. It sounds simple, but after years in this industry it still doesn't get old. That's the whole point.

What’s your favorite way to enjoy something you grow/raise?

Roasted whole bird, high heat, minimal seasoning. Salt, pepper, butter, maybe some fresh herbs. When the product is this good, it doesn't need much help.

What are you excited to grow, offer, or dream up for the future of your farm?

We're focused on expanding our reach across Texas and nationally — more people deserve access to food that's raised this way. We're also committed to deepening our regenerative practices, building soil health data over time, and helping other farmers understand what's possible when you take the long view.
