Origin Story & Identity

Our shop "The Flour & Flower Co." is owned by Jenay and Ronda in a small East Texas town. Rooted in faith, family, food, and community, we fell in love with the process of milling our own flour. We met at a local Farmer's Market and saw a need for nutrient dense food that addresses many deficiencies we see ailing our friends and family.

Fun Fact:

Jenay is a horticulture major and Ronda an education major both graduates of Stephen F. Austin State University in Nacogdoches, Texas. Therefore, we bring both of our backgrounds into our small shop by offering seasonal bedding plants and educating the community around us about our wheat journey. We speak to local 4-H Clubs, Garden Clubs, homeschool co-ops etc. teaching about the benefits of fresh milled flour.

What do you Produce?

We have a brick-and-mortar shop and offer all kinds of seasonal flowers, baked sweets and treats, sourdough, fresh milled wheat bread, and nine different wheats that we can mill on-site for all of your baking needs. We value community and small businesses and therefore carry local tallows, honey, teas, t-shirts, gift items, etc. in our shop. We also have a website offering special mixes, flours, and t-shirts to ship across the nation found here

What are you most proud of producing?

Our pride and joy come from making high quality baked goods from our stone-ground flour that are satisfying and nutritionally superior to anything found at the grocery store. We get so much joy hearing testimonies of how our bread made customers feel good and not bloated or sick! That's what real bread does for you, it makes you feel great!

Philosophy & Practices

We search for the best wheat/grain on the market that is glyphosate free, organic, and non GMO. The best products start with the freshest ingredients and it does not get any fresher than milling your own flour.

We believe that simple ingredients with minimal processing is what is best in all of our recipes. We never use seed oils, only butter and olive oil in all of our recipes along with the freshest most nutritious flour around.

What’s something about your practices that most people don’t know — but should?

Fresh milled wheat offers exceptional nutritional benefits for you and your family. Fresh flour offers a high concentration of vitamins, contains minerals like iron, potassium, phosphorus, magnesium, zinc, and selenium, along with antioxidants that contribute to a healthy diet. Fresh flour also aides in digestion and contains active enzymes. Our wheat gives your baked goods a richer, more complex flavor because it remains intact containing the bran, germ, and endosperm containing over 40 nutrients!

What’s the biggest challenge of making food the way you do?

Sourcing organic wheat can be challenging at times. You also have to store wheat and spend extra time and money milling the wheat into flour before you can start baking. Our flours and baked goods have a short shelf life because they are void of preservatives and conditioners, but we think it is worth all the effort!!

What’s your favorite part of the work you do every day?

No doubt it is the community. We have come to love so many people and feel so humbled that they continue to support us every single day!

What’s your favorite way to enjoy something you make?

Sourdough Pizza Crust
Mix 500 grams of Hard Fresh Milled Wheat ( appox. 4 cups), we like to use spelt and einkorn mixed
360 grams of water (1.5 cups)
100 grams of sourdough (1/2 cup) Starter
15 grams of salt (1.5 tsp)
Mix all together and let it sit covered for an hour.
Then do stretch and folds every 30 minutes for 2 hrs.
On a floured surface create 2 pizza crust. You can make them on parchment paper for easier transfer to your hot pan or stone.
Top your pizza and cook at 450 Degrees for about 5-7 min.

What are you excited to grow, offer, or dream up for the future of your shop?

We want to expand our milling facility and offer flour across the nation helping 1 family at a time. We also have some of the best mixes around and want to expand our variety.
