Origin Story & Identity
We started making pickles in the covid lockdowns of 2020, which evolved into pickling hot peppers, and then making gourmet hot sauce.
I’d say that as our name states we make “elevated hot sauces” and we stand behind that. When asked how they are elevated, we highlight the fact that our sauces are flavored intentionally and as described on the bottle, for example: if it says “lemon-herbed honey mustard hot sauce”, then thats what you should expect.
Mostly we make Hot Sauces, although we have experimented behind the scenes with some other non hot sauce products. We source ingredients as locally as possible.
Probably our house taco sauce, “MIJO!” which was our first real hot sauce recipe, and now our best-selling sauce to date.
Philosophy & Practices
Basically, We have to like it. If we want to eat our sauce over and over again then so will others. We are our biggest critic.
We try things (other sauces, etc.), and we take note of what others are doing with their products that we like or dont like, and apply that to our practices.
t0tsauce contains no additional preservatives. We rely on our salt and vinegar content to naturally preserve our product.
Complex flavor takes time. There’s alot of tinkering with and manipulating certain ingredients and processes at different stages of building the sauce to capture the flavor we were aiming for.

Beyond the obvious (tacos), certain foods really are the perfect vessel for hot sauce. I think mac n’ cheese, rice, pizza, and fried foods are great options.
