Rich, earthy, and full of deep savory flavor: shiitakes are the mushrooms that bring the umami.

These fresh Shiitake Mushrooms from Red River Valley Mushrooms are grown with careful attention to timing, texture, and quality. Shiitakes are known for their deeper flavor and meatier bite, making them a favorite for everything from quick weeknight sautés to brothy soups, stir fries, ramen, rice bowls, pasta, and cozy skillet dinners.

They’re the kind of ingredient that does a lot of heavy lifting, a little butter, a hot pan, a pinch of salt, and suddenly dinner feels very intentional.

What makes them special

Red River Valley Mushrooms began in 2020, when Alex and the team started building their mushroom farm during the early days of Covid. Five years later, they’re growing fresh mushrooms for the DFW community, including Blue Oyster, Lion’s Mane, Shiitake, and more.

Their process is built on precision: from maintaining a sterile environment for inoculation to managing the grow rooms for each mushroom’s preferred environment and opening grow bags at just the right time for harvest.

How we love to use them

Sauté shiitakes in butter or olive oil until the edges get golden and a little crisp, then finish with garlic, salt, herbs, or a splash of cream. They’re incredible in ramen, miso soup, stir fries, fried rice, risotto, pasta, omelets, steak bowls, or tucked into tacos.

For an easy dinner, cook them down with green bunching onions, leafy greens, and Circle N cream, then spoon over rice, pasta, toast, or chicken.

Storage + prep

Keep mushrooms refrigerated in their box or in a breathable paper bag. Avoid washing until right before cooking, and if needed, give them a quick rinse or gentle wipe and pat dry.

Shiitake stems can be a little firmer than the caps, so trim them if needed and save the stems for broth or stock.

From the grower

Red River Valley Mushrooms recycles spent mushroom compost back into the earth, creating a nutrient-rich, zero-waste cycle that plants love. The farm is also GAP certified and currently working toward MGAP audit and organic certification.
