Texas Panhandle-raised Bison Roast from Veteran’s Liberty Ranch. Rich, hearty, and made for slow cooking, this is the kind of freezer cut that turns a handful of simple ingredients into a proper Sunday dinner.

Sourcing & Practices

Veteran’s Liberty Ranch’s bison are raised in the Texas Panhandle near Caprock Canyons State Park. They graze on grass and are grain-finished, with an emphasis on raising the animals in a natural environment.

Bison is seasonal and generally available in late summer through fall.

What to Expect

A bison roast has the deep savory flavor you want from a pot roast without requiring an elaborate recipe.

Braise it with onions, garlic, carrots, potatoes, herbs, and broth; turn it into shredded bison for sandwiches or tacos; or use it for a cold-weather roast served over mashed potatoes.

How to Use

Thaw completely in the refrigerator. Season generously and brown the roast on all sides before adding broth, wine, vegetables, or other braising liquid.

Cook slowly until the meat is tender enough to slice or pull apart easily. Although whole bison roasts are food-safe at 145°F followed by a three-minute rest, a braising roast intended to become fall-apart tender will generally be cooked well beyond that point.
