Details
Texas Panhandle-raised Bison Sirloin Steak from Veteran’s Liberty Ranch. Lean, flavorful, and versatile, sirloin is a great entry point for anyone curious about cooking bison without jumping straight to one of the pricier steak cuts.
Sourcing & Practices
Veteran’s Liberty Ranch’s bison are raised near Caprock Canyons State Park in the Texas Panhandle, where they are grass-fed before being grain-finished.
The ranch offers bison seasonally, with availability generally concentrated in late summer and fall.
What to Expect
Sirloin gives you plenty of rich steak flavor in a relatively lean cut. Serve it whole, slice it thinly across the grain, or use it anywhere steak is only one part of the meal.
Try it with chimichurri, over a big salad, in steak tacos, alongside roasted vegetables, sliced into grain bowls, or simply served with potatoes and butter.
How to Use
Thaw completely in the refrigerator. Pat dry, season, and cook quickly over high heat on the grill or in a heavy skillet.
Let the steak rest before slicing, then cut across the grain for the most tender bite.
Whole bison steaks should reach at least 145°F followed by a three-minute rest.
About the Ranch
Veteran’s Liberty Ranch is built around a straightforward goal: raising healthy animals, caring for the land, and feeding local communities the way their own families eat.
