Oversized Dino Beef Ribs from Veteran’s Liberty Ranch. These substantial, meaty ribs weigh approximately five pounds per package and come from fully grass-fed, grass-finished cattle raised on native grasses. They are made for low-and-slow cooking, smoky weekends, and the kind of meal people talk about afterward.

Sourcing & Practices

Veteran’s Liberty Ranch raises its beef entirely on native grasses. Their cattle are fully grass-fed and grass-finished, never switched to grain at the end, and are raised without added hormones or antibiotics.

The cattle graze across several thousand acres using regenerative, rotational grazing practices designed to support healthy animals, strong forage, and responsible care of the land.

What to Expect

Often called “dino ribs” because of their impressive size, these beef ribs offer plenty of meat, pronounced beef flavor, and the connective tissue that becomes tender and succulent with patient cooking.

They are an excellent choice for smoking, slow roasting, or braising. Serve them Texas barbecue-style with a simple salt-and-pepper rub, or braise them with stock, red wine, onions, garlic, and herbs for a rich cold-weather meal.

How to Use

Thaw completely in the refrigerator before cooking. Season generously, then smoke or cook over indirect heat at approximately 250–275°F until the meat is deeply browned and a probe slides into the thickest portion with very little resistance.

Exact cooking time will vary based on the thickness of the ribs and your cooking method, so use tenderness—not the clock—as your final guide. Allow the ribs to rest before slicing between the bones and serving.

For an indoor preparation, brown the ribs first, add braising liquid, cover tightly, and cook slowly in the oven until fork-tender.
