Texas Panhandle-raised Ground Bison from Veteran’s Liberty Ranch. Naturally lean with rich, savory flavor, bison makes an easy swap anywhere you would normally reach for ground beef while bringing something a little different to the weeknight rotation.

Sourcing & Practices

Veteran’s Liberty Ranch’s bison are raised in the Texas Panhandle near Caprock Canyons State Park, where they have access to a natural environment and grass-based diet before being grain-finished.

Bison availability is seasonal, with supply generally arriving in late summer through fall, making this one of the ranch’s more limited proteins.

What to Expect

Ground bison has a deep, beef-like flavor without feeling especially heavy. Because bison is naturally quite lean, it cooks quickly and benefits from avoiding unnecessary overcooking.

Use it anywhere you would use ground beef: tacos, chili, pasta sauce, meatballs, stuffed peppers, rice bowls, casseroles, sloppy joes, or burgers.

How to Use

Thaw completely in the refrigerator and cook over medium heat. A little added cooking fat can be helpful in recipes where you would normally rely on fat rendered from ground beef.

For food safety, cook ground bison to an internal temperature of 160°F.
