Veteran’s Liberty Ranch raises its lamb on pasture with a grass-fed diet and without hormones or antibiotics. Their broader ranching approach emphasizes healthy animals, regenerative grazing practices, thoughtful land stewardship, and direct relationships with the local families purchasing their meat.

What to Expect

Lamb shoulder has more fat and connective tissue than the leg, giving it especially deep flavor and helping it stay moist during a long cook. With enough time, the roast becomes tender, rich, and easy to pull apart or carve.

It pairs beautifully with garlic, rosemary, thyme, cumin, oregano, tomatoes, red wine, root vegetables, beans, or warm spices.

How to Use

Thaw completely in the refrigerator. Season generously, then braise or roast covered at approximately 300–325°F until the meat is deeply tender and easily pierced with a fork.

For a more caramelized exterior, uncover the roast or increase the heat briefly toward the end. Whole lamb cuts should reach at least 145°F followed by a three-minute rest, although shoulder is generally cooked longer to properly soften the connective tissue.
