Barton Springs Mill began when James Brown, a classical musician and church music director, fell down a baking rabbit hole and realized he couldn’t find the flour he needed in Texas. So in 2016, he bought a mill and began rebuilding something this region had quietly lost: real grain infrastructure.

This certified organic, stone-milled all-purpose flour is milled fresh from revived heritage and landrace wheat varieties grown across Texas and neighboring states. Because wheat doesn’t grow in DFW, Barton Springs Mill is intentionally one of our “further” partners: the most responsible, regionally aligned grain option available.

What makes it different

Most grocery flour is roller-milled, stripped of bran and germ, then aged for shelf life.

  • Made from revived heritage varieties

Barton Springs Mill acts as seedsmen, providing rare seed stock to farmers and committing to purchase full harvests. They absorb risk so growers can focus on cultivating exceptional grain, even when hailstorms, drought, wildfires, or sandhill cranes try to interfere.

All milling byproducts are redirected to regenerative farms for animal feed. It’s a closed-loop system supporting regional agriculture beyond just flour.

Fresh flour behaves differently: better hydration, stronger fermentation, deeper flavor.
