Nutty, hearty, and deeply nourishing, wheat berries are one of the most versatile pantry staples you can keep on hand. Cook them like a grain for salads and bowls, simmer them into soups, or mill them fresh at home when you want flour at its peak flavor and nutrition.

Because they’re the whole kernel (bran, germ, and endosperm) they store beautifully and keep the full character of the grain intact.

How to use them

Cook them whole
Wheat berries cook much like farro or barley.

1 cup wheat berries + 3 cups water
Simmer 45–60 minutes until tender but pleasantly chewy.

From there you can:

  • Toss them into salads with herbs, olive oil, and lemon

  • Add them to soups or stews for hearty texture

  • Build nourishing grain bowls with roasted vegetables and eggs

  • Fold into pilafs or warm grain sides

They hold their shape beautifully and bring a nutty bite to dishes.

Mill them into flour
If you have a strong blender, food processor, or grain mill, you can grind wheat berries into fresh flour at home.

Simply pulse or grind until you reach your desired texture.

  • Short grind: rustic coarse flour for hearty breads

  • Longer grind: finer flour for baking

Freshly milled flour has incredible aroma and flavor because the grain’s natural oils haven’t had time to fade.

Storage

Because the grain is intact, wheat berries store exceptionally well. Keep them in a cool, dry pantry for long-term storage. For extended freshness, refrigeration or freezing works great.
