Chicken skin from Windview’s pasture-raised birds, packaged in an approximately one-pound portion. This is the cut for cooks who know that crisp chicken skin is not merely something surrounding the meal—it can very much be the point.

Sourcing & practices

Windview’s birds are raised across more than 130 acres of pasture and moved to fresh ground every day. Their access to outdoor space lets them forage for bugs and grasses and engage in the natural hunting, pecking, and movement Windview prioritizes.

The chickens receive non-GMO, corn-free and soy-free supplemental feed from a nearby mill and are raised without antibiotics or growth hormones.

What to expect

Approximately 1–1.1 pounds of chicken skin that can be crisped for eating or slowly rendered to produce cooking fat. Rendering also leaves behind crunchy browned pieces.

How to enjoy it

Season and roast or air-fry until crisp for a savory snack or garnish. Render slowly to make chicken fat for roasting potatoes, sautéing vegetables, cooking eggs, or adding richness to rice, stuffing, gravy, and other savory dishes.
