Details

A whole pasture-raised chicken from Windview Chicken Ranch in Boyd, Texas, sized at approximately four pounds. It is a practical, versatile centerpiece that can become dinner tonight, leftovers tomorrow, and homemade stock after that—exactly the kind of ingredient that earns its freezer space.

Sourcing & practices

Windview’s chickens are raised outdoors across more than 130 acres of North Texas pasture. The birds are moved to fresh ground daily through rotational grazing, giving them room to move, forage for grasses and bugs, and spend their lives in fresh air and sunshine.

Their supplemental feed comes from a nearby mill and is non-GMO, corn-free, and soy-free. Windview also raises its chickens without antibiotics or growth hormones.

What to expect

A whole chicken weighing approximately four pounds, offering a balance of breast meat, dark meat, skin, bones, and drippings. The whole-bird format lets you cook the meat together while retaining the pieces that contribute additional flavor during roasting or slow cooking.

How to enjoy it

Roast whole with herbs, garlic, onions, and seasonal vegetables; cook in a slow cooker; spatchcock and grill; or break it down into individual cuts. Save the bones and remaining bits for stock so one chicken can stretch across several meals.
