Details

A Pikes Peak roast from Beaty Farms, weighing just over three pounds. Sometimes called a heel-of-round roast, this lean, flavorful cut is best suited to patient cooking that allows it to become tender while preserving its robust beef character.

Sourcing & practices

Beaty Farms’ All-Natural Brangus beef comes from cattle born and raised on the family’s Aubrey farm. The herd is ⅝ Angus and ⅜ Brahman, bringing together the marbling and tenderness of Angus with the adaptability and hardiness of Brahman cattle.

The cattle spend most of their lives grazing open pasture. Beaty Farms rotationally manages its land to support healthy forage and avoid overgrazing, reflecting the family’s belief that they are caretakers of the land rather than simply its owners.

Before processing, the cattle are grain-finished for exceptional quality and flavor using a custom mixture developed with animal nutrition experts. Beaty Farms is certified under the Texas Beef Quality Product Program, and its beef is USDA inspected.

What to expect

One Pikes Peak roast weighing approximately 3.02–3.09 pounds. This is a comparatively lean roast with strong beef flavor and a firm structure that benefits from slow braising or careful roasting.

How to enjoy it

Cook slowly with broth, aromatics, and vegetables until tender, or roast gently and slice thinly across the grain. Leftovers work especially well in sandwiches, beef and noodles, soups, tacos, or breakfast hash.
