Origin Story & Identity

How did you get into making bagels? What’s the story behind it all?

Growing up in the foothills of Northern California, my parents were fantastic cooks. I was fortunate to have been raised in the kitchen and be exposed to a wide variety of cuisines. My parents kept their Polish roots in the forefront, and I’ll always remember my grandmother’s visits with fresh bagels and kielbasa from New Jersey. As I moved away to college, the hunt for bagels began. Settling on California’s central coast, my favorite bagel spot was the closest thing I’d had since my days of “imported” New Jersey bagels.

After moving to Flower Mound in 1999, once again I began my search for bagels. I was determined to learn to make my own and they quickly became a staple in our house. While I’ve consistently made bagels for family and friends for years, in 2023 I turned my passion into a side gig and began selling bagels from my home kitchen. In 2024, I left a 30-year career in corporate America and decided to focus on my business full time.

I’ve now grown my offerings to include scratch made cream cheese and hummus, as well as bagel chips. On Saturday mornings, you can find me at the Denton Community Market. I’m excited to partner with The Local Markethouse so that I can better serve a growing customer base.

Do you have any certifications or special licensing?

I’m licensed as a cottage baker by the Texas Department of State Health Services (DHSH license #7921).

Do you have a fun fact, tradition, or personality quirk that makes Violet’s Bagels uniquely “you”?

My boys grew up on my bagels – not many moms can say that her son lost a tooth while eating a bagel she made! I’ll forever be proud of this achievement!

What do you make?

I make East Coast style, boil and bake bagels! In addition to traditionally topped bagels, I also offer artisan flavors including Asiago and Jalapeno Cheddar. Scratch made spreads include a variety of flavors of cream cheese and hummus, and bagel chips are the newest menu add. All products are made with care and patience, with average production time for each running about two days.

What are you most proud of making?

Without a doubt, the bagels. It’s a lot more complicated to make a consistently perfect bagel than it may seem. I’ve spent years refining my technique and my curious mind will always be looking for ways to improve my process.

Philosophy & Practices

How would you describe your craft, sourcing, and the philosophy around it in your own words? How does it differ from others?

My products differ from most found locally as they’re made by a methodological East Coast process. It’s time consuming but is essential in creating the right flavor and texture of bagel. My bagels are made weekly to order and are always sold fresh the day they are made. Weekly batches of cream cheese and hummus ensure customers are buying the freshest spreads possible.

I have always believed in using the same high-quality ingredients that I would use in my own home. My products are made with a combination of organic and conventional, non-GMO and traceable ingredients. While I aim to use Texas local, some products are selected based on their uniqueness.

How does this reflect in your practices?

I’ve carefully curated an intentional menu based on responsibly sourced ingredients from a combination of family owned and farmer-owned businesses, and member-owned co-ops. While these ingredients often carry a higher price, I balance my suppliers to offer products at an affordable price.

What’s something about your practices (sourcing, process, sustainability, etc.) that most people don’t know — but should?

There’s a lot of thought put into my products, and I’m constantly imagining ways to improve my menu and expand it with select, creative ideas.

What’s the biggest challenge of making food the way you do?

Being a cottage baker! Baking on a large scale and working to deadlines in a home kitchen presents constant challenges. I’ve adapted my kitchen and equipment to anticipate and overcome those that may come up; however, I’ve come to accept that the nature of the craft is to test my skills!

Daily Life & Personal Connection to the Work

What’s your favorite part of the work you do every day?

Having my college age boys witness my transition from the corporate world to an entrepreneur. It’s important that they see they can pursue their passion and be successful if they put in the effort.

What’s your favorite way to enjoy something you make? (Bonus: share a simple recipe or pairing!)

I’m not a fan of toasting bagels and enjoy the chew of a freshly made bagel. For a quick meal or a snack, there’s nothing better than a garlic/onion bagel spread with hummus, topped with fresh tomatoes and scallions!

What are you excited to grow, offer, or dream up for the future of Violet’s Bagels?

My greatest dream for Violet’s Bagels is to grow as a specialty bagel bakery within Denton County. I have an appreciation for the slow process of my craft and am looking forward to sharing it with like-minded customers.
